Meal method #1: Coconut Crusted Chicken Strips

Ingredients:

· Boneless chicken breasts (skinless)

· ½ cup of coconut flour

· 2 eggs

· A splash of coconut milk (full-fat)

· 1 cup shredded coconut

· Sea salt and cracked black pepper to add additional taste

Preparation Time: 10-15 minutes

1. First thing you all the time want to do is preheat your oven- 400 F

2. Flatten chicken breasts with a rolling pin or cooking hammer to an even thickness

3. Cut chicken into long strips measuring about 3/4 inch to 1 inch in width

4. Grab three bowls for your mixing ingredients

- One for the coconut flour

- One for the coconut milk and eggs mixture

- One for the shredded coconut

5. Coat each strip first in the coconut flour, then the milk and egg mixture, and ultimately the shredded coconut

6. Place strips on a large baking sheet spread apart

7. Cook for 10-12 minutes or until chicken is fully cooked

8. Serve with your favorite Paleo dipping sauce

Meal method #2: Eggs Benedict Burger with Avocado

Ingredients:

· 3 lbs of Paleo beef (grass-fed)

· 6-10 large eggs

· 2 cloves minced garlic

· 1 tsbp fresh herbs finely chopped (your choice)

· 2 avocados (cut into slices)

· Paleo mayonnaise or preferable sauce

· Sea salt and fresh cracked black pepper

Preparation: 10-12 minutes

1. Integrate ground beef and 3 eggs into one large bowl and mix until well blended

2. Add in garlic, herbs, sea salt, and black pepper to your taste

3. Form patties (6-8 is ideal)

4. Place on preheated grille

5. Cook each side for 5-7 mintues

6. While burgers cook- start on the eggs

7. Poach eggs using a boiling pot of water or an egg poacher

8. Cook them for 5-7 minutes before removing

9. Remove patties from grill once they are fully cooked

10. Place poached eggs on top of burgers

11. Add avocados slices to the side

12. Serve with your favorite Paleo sauces
